Shouldn't that be "not as much fun as it sounds"?

Yes and no. Traditional grammar does not allow "fun" to serve as an
adjective, so it needs a modifier like "much" in sentences like
yours. But in colloquial English, at least in the US, "fun" as an
adjective is so solidly established that most younger speakers of
American English wouldn't understand why there is any question about
the version on the subject line. Most dictionaries now routinely
indicate that "fun" can be used as an adjective (although, to be fair,
they tend to use mostly examples where it precedes the noun):

If you want to be a stickler, don't use "fun" as it's used on the
subject line, but don't be surprised when you see it.
