I came across 'Say one' out of context,
and can't figure out what it means.
But I know what 'Say when' means.

I suppose it's possible, but scarcely idiomatic. "Choose/Pick one" or

"Name one" would be much more readily understood.

Well, since it was admittedly out of context (see original message), it
could have been from a dialog like:

A: I think I'll say a prayer.
B. Say one for me while you're at it.
