What can you call a car and a caravan when they are put together?

Setting aside the urge to say "a roadblock", I think the UK usage would

call both the trailer and the combination "a caravan".

(That is, "We got stuck behind a caravan for 4 solid hours" would refer
to the combined car+caravan, not just to the trailer part.)

Interesting ... I would use the same phrase but would be using caravan
to mean caravan and leave it to the listener to assume it was being
pulled by a car.
I don't think there's a term for a car and caravan other than, er, car
and caravan. You'd think there would be. Well, I would.

Unless the OP's thinking of a motorised caravan, commonly called a
"camper" in the UK.

Caravanners tend to refer to their car + caravan as their outfit (when
talking to other caravanners).
In the "motorised caravan" fraternity, a camper tends to refer to the
smaller units, such as high-tops or the older "caravettes". The large units
are "motorhomes" and owners of these become a little peeved if people call
them campers - but don't ask me at what size the unit ceases to be a camper
and suddenly becomes a motorhome.

The metal attachment welded to the rear of your car that lets you
attach, for example, a "caravan".

If so, this would be wrong. Car and caravan are two
vehicles, which can be separated. A Winnebago is
a single vehicle, a truck built to enclose a bed, kitchen,
bathroom, etc. (Winnebago is a company name,
possibly the inventor of this vehicle, still their
commonest manufacturer.)
